Pineapple Ice Cream Recipe

Pineapple Ice Cream

 

Nothing says summer like ice cream and one of my favorite flavors is pineapple so I combined the two to make a healthier version of a Dole Whip.  With only 2 ingredients (3 if you want to add protein powder), it is super simple and also super delicious!

 

Ingredients:2 cups diced fresh pineapple

Silk unsweetened cashew milk (you can use other milk bases, this is just my preferred option)

Optional: 1 scoop unflavored protein powder of your choice

 

Directions:

Add the diced pineapple to your Creami pint container.  If you are using protein powder, add a scoop in.  Cover with cashew milk up to the fill line.  Freeze for at least 12 hours, then blend as Lite Ice Cream on your Creami appliance.  After that cycle, scoop a little hole in the middle of the ice cream and add more cashew milk.  Blend one more time on the re-spin cycle.  Enjoy!

Pro tip: I topped mine with some shredded unsweetened coconut for texture.

 

I have also played with the idea of using pineapple juice on the re-spin cycle instead of more cashew milk, if you try that let me know what you think!

 

I love the fact that the simple ingredients create such refreshing and bold flavor, and that there are no added sugars, artificial sweeteners or preservatives.  And even though it has less than 175 calories for the pint, it is incredibly satisfying.
